Questo è Cure #1, noto anche come Prague Powder Number One o Instacure #1, una miscela di sale marino kosher (93,75%) e nitrito di sodio (6,25%) SENZA agenti antiagglomeranti.

Questa salamoia dovrebbe essere utilizzata solo per preparare salumi che saranno cotti dopo la salatura, ad esempio pancetta, prosciutto, salsiccia fresca stagionata, ecc.

Sebbene la nostra polvere di Praga sia priva di coloranti (per rispettare le normative REUL 1333/2008), viene spesso definita sale ROSA. Le nostre polveri di Praga NON contengono agenti antiagglomeranti e NESSUN COLORANTE per utenti domestici e professionali.

Questa salamoia DEVE essere pesata accuratamente (si consiglia una bilancia con una precisione di 0,1 g) e utilizzata secondo una ricetta che specifichi la salamoia n. 1 o la polvere di Praga n. 1, solitamente 2,5 g per kg di carne in una salamoia a secco o 7,5 g per litro in salamoia.

La polvere di Praga è un agente di stagionatura sicuro ed efficace se usato correttamente; tuttavia, è un sale di stagionatura CONCENTRATO e DEVE essere miscelato con altro sale.

Delivered as scheduled. Prefer the tubs to small packets. Otherwise, I'm very happy with the service. Especially great with advice over the phone, which is invaluable. It's reassuring to know that support is available a phone call away.
